HOMEMADE SAUSAGE

Most of the local high-street Italian restaurants around give Italian cuisine such a bad rep, not because their food is not good or that service was poor, but more of the lack of Italian authenticity to its flavor. And who could blame them? If their Italian owners/chefs were part of the mass economic emigration of around 25 million southern Italians from the late 19th century to the better part of the 20th century, then it’s more likely that they have never tasted true Italian food!

Or maybe they just didn’t get the chance to know the secrets of authentic Italian gastronomy.


And so they become part of a culture that propagates the glaring misconceptions about what is genuine Italian cuisine such as what we usually see on the glossy pages of cookery magazines or primetime TV shows of renowned chefs. It’s not a criticism, though: it simply is the reality.

 

But nobody can argue to the fact that the westernized version of the Italian culinary heritage has become such a worldwide success, obviously because those dishes are rather particularly tasty and delicious, but more importantly because it has Italian roots to begin with.


The problem is that Italian restaurateurs nowadays do not even bat an eyelash declaring their fare is the real deal. You bet these dishes are just amalgams of the hearty, rustic Italian meals tweaked to varying levels in order to satisfy the American sense of taste.

 

True that the plethora of pseudo-Italian cuisine around have now invaded our society but it doesn’t mean there are no more decent Italian food lovers – purebred or immigrant – that would serve you up with classic and signature Italian dishes that give ode to its humble regions back home.
